Man, it’s been a crazy couple of weeks in middle Tennessee. We were iced in pretty much all of last week and this week we were snowed in for two days. That’s pretty unusual for us. To top it off I seem to be coming down with a cold.
So with cabin fever setting in it’s not unexpected that we need some comfort food. A quick peak in the fridge revealed that we have a few stray potatoes and a thawed chicken breast hanging out.
Hmmmm….chicken and biscuits…..
Yeah, let’s do it.
I followed this recipe for these biscuits. I halved the recipe. It is only lunch time after all.
I then sliced two potatoes into strips about 1/2 an inch in with. I put all of them into a pot of water and boiled them for 5 minutes. Then drain them well. Spread them out on a cookie sheet, toss with some olive oil and salt. Put them in the oven at 425 for about 20 minutes. Stir them about half way through.
Meanwhile, back at the stove…
Slice a chicken breast into pieces. You want them to be about a half inch thick and about 2-3 inches long. Think chicken tenders here. Heat up a little canola oil in the same pan you boiled the potatoes over medium high heat. Toss the chicken in a little flour, salt, and red pepper. Fry the chicken on each side for 2 minutes. You aren’t cooking the chicken all the way through, just giving the outside a little crispiness.
Spread the chicken on cookie sheet. Put it in oven with the fries for the final ten minutes. Let everything rest for a few minutes. Split the biscuit, add a little mayonnaise, one piece of chicken.
